Everyday is Pancake Day! Gluten Free, Dairy Free Two-Ingredient Banana Pancakes 🍌


We thought we would share this famous and quick 2 ingredient pancake recipe. These delicious morsels are dead easy and are refined sugar, gluten and dairy free for the ones with intolerances!

(Mini) pancakes are a great way to treat yourself on a weekend morning, in the afternoon with a cuppa, or as a pudding after dinner; still using eggs and banana, which are great for protein, fibre, good fats and potassium. Serve with seasonal fruits, yoghurt and cinnamon. We even serve our pancakes with nuts and seeds. Yummers!

Two-Ingredient Banana Pancakes 🍌

  • Servings: 2 peeps - Makes around 10 pikelet-sized pancakes

Our favourite recipe for a last minute dessert treat or a weekend brunch.

What you'll need:

  • 2 medium bananas (the riper the better so keep aside those on the edge as they will be perfect!)
  • 2 free-range/organic eggs
  • 1/2 tsp ground cinnamon (optional)

What to do:

  1. Give the bananas a good ol’ mash in a bowl. Try to get out as many of the lumps as possible to make it easier to mix until they’re well and truly smooth.
  2. Add the eggs to the bananas and combine using a fork. Aim for a smooth consistency (Always make sure that you break each egg in a separate bowl to avoid any stray bits of shell from contaminating the batter).
  3. Stir through the cinnamon (you can always top up once serving your pancakes with the yoghurt and fruits).
  4. Heat a non-stick pan over a medium heat and spoon (a couple of dessertspoons to get the size of one pancake) on the batter.
  5. When small bubbles appear on the surface of your pancake (around 90 sec), give them a flip very delicately. Give them another minute or so, until they’re golden brown. The first one always seems to be the one we struggle with.
  6. Serve. Top with a dollop of natural yoghurt and some fresh seasonal fruits… Delish!
  7. Enjoy!

Tip: If you don’t have a massive pan to cook all the batter at once, you can keep them warm in the oven whilst you cook more. Then you get to eat with your loved ones
